Gatte ki Sabji



Gatte ke sabji an authentic  recipe  from rajasthan cuisine is a delicious curry prepared from Gram flour as based ingredient. Gatte means cooked Gram flour dumplings  which added in to spicy curd gravy.

Ingredients
For gatta
Gram flour  (besan)  1cup
Green  chilli -1
Garam masala-1/2 tsp
Salt to taste
Oil -1/2 tsp
Turmeric  powder- 1/8 tsp
Red chilli powder -1/2 tsp
Baking soda - 1/4 tsp
Chopped Green coriander leaves -1/2 tsp

For Gravy
Oil- 4 tsp
Ginger Garlic pest -2 tsp
Garam masala - 1/2 tsp
Turmeric powder-1/2 tsp
Red  chilli powder  -1tsp
Cumin seeds ( jeera)- 1/2 tsp
Chopped Green coriander leaves -1/2 tsp

How to make gatte  ki  sabji

For gatte:
Take a large mixing  bowl mix all dry masalas  and besan  (Gram flour) and finely chopped coriander  leaves.

Add 1 tsp oil mix gently  to blend add baking  soda to the basan and combine  to form a stiff dough. Keep aside for rest 10 min.

After that divide into 6 pieces  and roll them with your  hands cylindrical shape about 1/2 inch of thickness  and 4 inch length.

Heat 3-4 cup  water and bring  it to  a boil add gatte and let them to cook . They will float on the top when  cooked.

Remove from heat and let them cool. Reserve the water in which  gatte were boiled.

When the gatte completely  cool cut into 1/2 inch long  pieces  and keep  aside.


For gravy:
Add  all the masalas in a bowl  to the curd and whisk  until  smooth .

Heat oil in a pan add Cumin seeds  then add ginger  garlic  pest,  saute  it till golden brown. Add onion pest  and saute  till golden brown.  Pour whishk curd  and cook until  oil separate.

Add gatte in to the gravy. Add reserved boiling water if  gravy  is too thick.
Cover  it and cook for few  minutes. Turn off the flame.

Garnish  with chopped  coriander leaves.
Serve with  paratha  or roti
